3 ripe bananas
2 tbsp banana flour (optional)
5 free range eggs
1 tbsp ground cinnamon
1 vanilla bean
(coconut oil for frying)
Blend all ingredients together.
Heat a medium non-stick frying pan over medium heat. Spray with coconut oil.
Pour mixture in pan to make about 12cm diametre pancakes, cook pancake until bubbles appear on surface. Turn and cook until cooked through. These pancakes can be delicate so take care when flipping!
Top with fresh fruit and extra cinnamon.
