2 tablespoons coconut flour
2 tablespoons ground golden flax seed
1 1/2 cups organic coconut milk (I use the coconut milk in a carton for this recipe)
40g organic butter
1 teaspoon organic vanilla extract
sprinkle of coconut blossom sugar (or sweetener of your choice)
Place milk, vanilla extract, coconut flour and flax seed in a saucepan (I use a thermomix and set temp to 90 degrees, Speed 3) and heat while stirring until it starts to thicken. You can add more milk if too thick.
Add beaten eggs gradually while stirring (or add eggs to thermomix while its still heating).
Add butter once eggs have mixed through.
Serve once butter has melted through and porridge is smooth.
Top with sugar and fruit
