These delicious healthy muffins are suitable for autoimmune and anti candida diets (using stevia). My children can't get enough of them! Great as a snack or served straight out of oven for breakfast!
3 large bananas
1/4 cup (30g) banana flour
1/4 cup (20g) coconut flour
1/4 cup (30g) chia seeds
4 free range eggs
85g coconut oil
30g stevia powder or 1/4 cup maple syrup
1 tablespoon cinnamon powder
Extra cinnamon to sprinkle on top.
Blend all ingredients together in food processor or thermomix until smooth
Bake in greased muffin cups in 180 degree celsius oven for 20 minutes.
Makes 15 muffins
Notes:
If you have trouble finding banana flour, use 1/2 cup coconut flour instead of 1/4 and add an extra egg.
